Chicken Okra

A variation of the previous recipe.

Directions:
** If using frozen okra (which is just fine) thaw first.

Put oil in hot casserole pan.

Salt & pepper the chicken parts and place them in pot.

Place cover on pot and be careful of platter.

Lightly brown them for 5-8 minutes.

Add chopped onion and garlic.

Stir and cook for 5 minutes.

Add okra, can of plum tomatoes, red wine, more salt & pepper and parsley.

Stir gently.

Cover and simmer for 1 hour.

Check the chicken for doneness.

Serve with hot white rice.
