Rice pie

Directions
Parboil the rice and drain.

Beat the eggs and add to the rice along with the grated cheese, some butter, a pinch of salt and pepper to taste, and mix together.

Oil a baking dish and place half the pastry sheets, one at a time, brushing each layer with some butter.

Add the filling and cover with the remaining pastry,again brushing each layer with melted butter.

Sprinkle the top sheet with a little water and score through the top 3 or 4 layers with a sharp knife, dividing into individual portions.

Bake in a medium oven until top becomes a golden brown.
