Kalamarakia Yemista Ingredients

1-2 Pinch Mint   Finely Chopped 
4-6 oz Oil ( Olive )    
2 Medium Onions ( White )   Sliced 
1 Tablespoon Parsley    
1-2 Pinch Pepper   To Taste 
1 3/4 Cup Rice    
2-3 Pinch Salt   To Taste 
2.20 lb Squid    
2 Small Tomatoes   Finely Chopped 
Kalamarakia Yemista Directions
Wash the squid very well and remove the bone and ink bag.

Fry the onions in the oil until transparent.

Add the tomatoes, mint, parsely, and 2 cups of water.

When it comes to a boil, add the rice and continue to cook for another 15 minutes.

Stuff the squid with the mixture and place in an oiled baking dish.

Add a little tomato juice and bake in a medium oven for about 35 minutes.
